Chicken Gyros with Tzatziki

Gyros is a Greek classic – a delicious dish slowly grilled on a spit and most often enjoyed inside pita bread. In Poppamies’ summer kitchen, chicken gyros is prepared slowly on the grill. A simple tzatziki sauce is made to go with it and enjoyed together!

Tzatziki

  • 300 g Greek yogurt
  • 1 tbsp Poppamies Garlic RUB seasoning
  • zest and juice of 1 lemon
  • 1/2 cucumber, grated
  1. Spread Poppamies Sriracha RUB on one plate and pour Greek yogurt onto another. Finely chop a handful of fresh mint and mix it into the yogurt.
  2. Press the chicken thighs into the Sriracha RUB on both sides, then coat both sides with the yogurt mixture. If you have time, let the chicken marinate in the fridge for a few hours.
  3. Stack the chicken thighs into a tower. Once the stack is about 10 cm high, push one wooden skewer through the middle. Add the rest of the thighs by threading them onto the skewer. Finally, insert 2–3 skewers diagonally through the meat to help keep it upright on the grill. You can trim the skewers if the tower doesn’t fit in your grill.
  4. Create a coal bed on both sides of the grill, leaving the middle for indirect heat. Heat the grill to about 170°–200°C and place the chicken tower in the center over indirect heat.
  5. Grill the chicken tower for about 1–1.5 hours, until the internal temperature reaches 72°C. Turn the skewer every 30 minutes to ensure even cooking.
  6. Slice the meat vertically straight off the skewer and serve with tzatziki in flatbread, on top of soft rye bread, or even in tacos!

Tsatsiki

  1. Mix all ingredients in a bowl and let sit in the fridge to develop flavor.
