For serving

  1. In a bowl, combine Poppamies Grill Mix RUB, oil, and Poppamies Caribbean Chilisauce.
  2. Add the chicken breast and coat it well on all sides.
  3. Let it marinate for at least 15 minutes (or up to an hour for deeper flavor).
  4. Heat a grill pan or skillet over medium heat.
  5. Cook the marinated chicken for 5–6 minutes per side, until nicely charred and fully cooked through.
  6. Let it rest for a couple of minutes, then slice.
  7. Add the cooked rice to a serving bowl.
  8. Top with sliced Caribbean chicken and a generous spoonful of mango salsa.
  9. Drizzle extra Poppamies Caribbean Sauce on top for that sweet-spicy island vibe.
