Spicy Chow Mein

  • 150 g chow mein noodles (or egg noodles)
  • 150 g mushrooms, sliced
  • 1 bell pepper, thinly sliced
  • 1 medium carrot, julienned
  • 2 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional, for depth)
  • 1 tsp sesame oil
  • ½ tsp sugar (to balance flavors)
  • 1–2 tsp Poppamies Fire Demon Sauce (⚠ very spicy — add carefully)
  • 2 eggs
  • 2 tbsp neutral oil (sunflower/rapeseed)
  • Salt & black pepper, to taste
  • Optional garnish: spring onions, sesame seeds, coriander
  1. Cook the noodles: Boil noodles according to package instructions until just al dente. Drain, rinse under cold water, and toss with a splash of sesame oil to prevent sticking.
  2. Prepare the sauce: In a small bowl, mix soy sauce, oyster sauce, sugar, and a small amount of Poppamies Fire Demon Sauce (start with ½ tsp and adjust to taste). Set aside.
  3. Stir-fry the vegetables: Heat 1 tbsp oil in a wok or large pan over high heat. Add garlic, mushrooms, peppers, and carrots. Stir-fry for 4–5 minutes until just tender but still crisp.
  4. Combine noodles & sauce: Add cooked noodles to the wok. Pour over the prepared sauce. Toss everything together over high heat for 2–3 minutes until well coated and glossy.
  5. Fry the eggs: In a separate pan, heat 1 tbsp oil and fry the eggs sunny-side up until whites are set but yolks still runny.
  6. Assemble & serve: Divide chow mein into bowls or plates. Top each with a fried egg. Garnish with spring onions, sesame seeds, or coriander if desired
