Optional garnish: spring onions, sesame seeds, coriander
Cook the noodles: Boil noodles according to package instructions until just al dente. Drain, rinse under cold water, and toss with a splash of sesame oil to prevent sticking.
Prepare the sauce: In a small bowl, mix soy sauce, oyster sauce, sugar, and a small amount of Poppamies Fire Demon Sauce (start with ½ tsp and adjust to taste). Set aside.
Stir-fry the vegetables: Heat 1 tbsp oil in a wok or large pan over high heat. Add garlic, mushrooms, peppers, and carrots. Stir-fry for 4–5 minutes until just tender but still crisp.
Combine noodles & sauce: Add cooked noodles to the wok. Pour over the prepared sauce. Toss everything together over high heat for 2–3 minutes until well coated and glossy.
Fry the eggs: In a separate pan, heat 1 tbsp oil and fry the eggs sunny-side up until whites are set but yolks still runny.
Assemble & serve: Divide chow mein into bowls or plates. Top each with a fried egg. Garnish with spring onions, sesame seeds, or coriander if desired
