This isn’t your average fried rice. Packed with vibrant vegetables, golden rice and the rich umami punch of Poppamies Awesome Sauce, this dish turns humble leftovers into something crave-worthy. Great as a side, but works awesomely as a main course too.
- 2 cups cooked rice (preferably day-old, cold)
- 1 small carrot, finely diced
- ½ cup green peas (fresh or frozen)
- 2 spring onions, chopped (white and green parts separated)
- 1 garlic clove, minced
- 1 tbsp vegetable oil or sesame oil
- 2–3 tbsp Poppamies Awesome Sauce
- 1 tsp sesame seeds
- Salt to taste (optional, since the sauce adds flavor)
- Have all the veggies chopped and the rice ready before cooking, as stir-frying happens quickly.
- Add oil to a wok or large pan over medium-high heat. When hot, sauté the garlic and the white part of the spring onion for 30 seconds.
- Stir in the diced carrot and peas. Cook for 2–3 minutes until tender but still bright in color.
- Break up any clumps and toss the rice into the pan. Stir-fry for 2–3 minutes to heat through and slightly crisp up the grains.
- Pour in Poppamies Awesome Sauce and toss well so the rice absorbs the flavor evenly. Taste and adjust seasoning if needed.
- Remove from heat and top with the green parts of the spring onion and sesame seeds
